It’s a weekend of KY basketball games in our house- Perfect excuse for having game day food!
Sadly – there aren’t too many AIP options – but guacamole and plantain chips make up for that!
This is my favorite way to make guacamole – enjoy!
Guacamole (AIP-Friendly)
Prep: 5 min Serves: 1-2
1 avocado
1/8 to 1/4 tsp sea salt
1/8 tsp pepper
1/8 to 1/4 tsp garlic powder
1 half like juice
Remove the skin and pit from the avocado. With a spoon, smash and combine the rest of ingredients with the separated avocado in a small to medium mixing bowl. Ready for serving!
I like mine to still have a few chunks of avocado. And plenty of plantain chips. 😉
To store – sprinkle a little lime juice on top, and place plastic wrap directly on top of the guac to cover completely. Store in fridge for 2-3 days.
Yum! Guacamole is definitely a staple in our house. I’ve heard a lot about plantain chips but have yet to have one! Looks amazing though! I want to try it!
