I absolutely love cacao nibs. The taste is almost like a fine wine – I know that may sound strange, but they have this natural sweetness and bitterness all at the same time. I can just eat a whole handful.
I set out to make a little energy bite that would work as a portable snack (or dessert) that incorporated cacao nibs. And something that would allow you to still experience the crunchy texture.
These little bites are the result! They are only sweetened with mineral-rich dates and incorporate healthy coconut fat.

Crunchy Cacao Bites
Prep: 10 minutes Yields: 16-18 1 inch bites
Ingredients:
- 9 Medjool pitted dates (should be plump and moist – not dry and hard)
- 2 cups coconut flakes
- 1/2 cup cacao nibs
- 2 tsp vanilla extract
- 2 tsp coconut oil
- 1/4 tsp sea salt
- 1/4 to 1/3 cup shredded coconut
Directions
- Add dates, half of the coconut chips, vanilla extract, 1 tsp coconut oil and sea salt to a food processor. Process until beginning to ball up and well-combined.
- Add the remaining coconut oil and coconut chips along with 1/4 cup of the cacao nibs, process until well-combined.
- Add the remain cacao nibs, pulse until just combined.
- Form one inch balls by hand, with a tablespoon, or a 1-inch scooper.
- Pour shredded coconut in a small bowl, roll the 1 inch balls in the shredded coconut to coat.
- Store in airtight container on counter for 1-2 weeks, or in fridge for 3-4 weeks.
It’s strongly recommended ( especially by my husband) to enjoy these with coffee. I also recommend giving these a gift 🙂 they are appreciated by all kinds of eaters!
