Just two itty bitty weeks until March, which means Spring is coming! I do enjoy these winter months – full of cozy sweaters, leggings, and slow cooker soup. But man, I do have a deep longing for warmer weather and sunshine. Perhaps that’s why this smoothie recipe has been bouncing around in my head for the past couple of weeks. I just love the combination of flavors in this smoothie: sweet orange, fresh carrot juice, spicy ginger, and creamy coconut milk. So many good immune boosting elements to this too, as we near the end of winter! My husband has had a cold the past few days, so with this, bone broth, and good rest, I’m hoping he will be much better in the next couple of days. Orange Dream Smoothie

Yields: 14-16 ounces          Serves: 1-2  Ingredients: 

  • 1 medium to large orange, peeled and seeds removed
  • 1/2 cup carrot juice (I buy mine at Trader Joe’s)
  • 1-2 tsp pureed or shredded ginger (the more you add the more kick the flavor will have)
  • 8-10 frozen coconut milk, almond milk, or yogurt ice cubes (I freeze mine in this ice tray)

Directions: Add all of the ingredients to a blender, and blend until smooth. Serve immediately. Enjoy 🙂
